Cucumber Mint Salad with Matcha Green Tea & Ginger Dressing


CUCUMBER & MINT SALAD WITH MATCHA GREEN TEA & GINGER DRESSING



Ingredients
  1. 2 medium cucumbers, peeled
  2. 1-1/2 tsp salt
  3. 1/3 cup thinly sliced green onions
  4. 3 tbsp finely chopped fresh mint
  5. 3 tbsp sesame oil
  6. 2 Tbsp of pureed ginger root
  7. 2Tsp Matcha powder
  8. Sprinkling of toasted sesame seeds
  9. Dried chili flakes to taste (optional)
Instructions
  1. Julienne cucumbers into spaghetti like strips with a julienne peeler.
  2. In a sieve sprinkle cucumbers with salt and let chill in fridge for 10-15 minutes.
  3. Rinse under cold running water and pat dry with paper towels.
  4. In bowl, toss cucumbers with onions, mint & TASTE OF THE OKANAGA MATCHA GREEN TEA & GINGER SALAD DRESSING
  5. Sprinkle with toasted sesame seeds and for an extra little kick dried chili flakes
Notes
  1. You can find julienne peelers in most grocery or kitchen stores, or even online.
